Whole30 Recipes - Grilled Wedge and Biltong Salad

One thing I love about eating #Whole30 is really tasting and appreciating the different flavors of my food, rather than everything merging together under the guise of 'syrupy sweetness!' And boy does this grilled wedge pack a few flavor punches!

Serving size is 4 

Cook time is 10 minutes

Gather this together:

Ingredients:

2 Romaine lettuce hearts halved

1.5 cup Brooklyn Biltong Steakhouse Beef Jerky

2 cup radish diced

1/2 cup red onion diced

1/2 cup avocado mayo (I like Chosen Foods brand best)

1/4 cup coconut milk

1 tsp garlic powder or 1 clove garlic

1 tsp parsley

2 tsp dill

1/2 tsp onion powder

1/4 tsp sage

1/4 tsp red pepper flakes

1/2 black pepper

1/4 tsp salt

1 Tbsp olive oil

Now do this:

  • 1. Drizzle olive only flat size of halved Romaine hearts and season with salt and pepper. Place on medium-high grill (flat side down) for two minutes. Flip, carefully, for another two minutes. The lettuce should be slightly charred at this point.
  • 2. For ranch dressing- combine avocado mayo, coconut milk, garlic, parsley, dill, onion powder, sage, red pepper flakes, black pepper and salt into a bowl and whisk until smooth.
  • 3. Sprinkle radish, tomato, onion and jerky on to grilled Romaine hearts and drizzle with ranch dressing.
